Beet Salad

1 beet, cooked, peeled and julienned
1/2 cup zucchini, julienned
1/2 cup cucumber, julienned
1/2 carrot, peeled and julienned
1/2 apple, julienned
Balsamic vinegar
Salt and pepper

Combine all the fruits and veggies, then add the salt, pepper, oil and BV to taste.  Toss and serve. Quick, healthy and YUMMY…who could ask for more?  Makes a big lunch salad or a few sides for dinner!



1 cup Sliced Black Olives
1 Garlic Clove
Juice of 1/2 Lemon
4 tbsp EVOO

Combine the first 4 ingredients in a blender or food processor.  Slowly add the olive oil while still blending.  Makes about 6-7 oz.

Raw Oatmeal

1 Banana
2 Apples, peeled, cored and diced
1 tbsp Ground Flax Seed
2 tsp Cinnamon
1/4 cup Water
1/4 cup Slivered Almonds

Combine first 4 ingredients in a blender and pulse until pieces are small.  Slowly add 1/4 cup of water while blending, but make sure it doesn’t get soupy.  I didn’t add the full 1/4 cup and it came out fine.  Put the mixture in your bowl, mix in almonds and enjoy!  No, there isn’t actually oats on it, but it is delicious and filling!


Energy Bars

1 1/2 cups Pitted Dates
1 cup Nuts and Seeds (any type is fine…my first batch was Walnuts and Sunflower Seeds)

Mash the dates up into a paste.  Using a food processor only makes the dates stick to the blade, so I cut them up and used my hands to mash them.  Using a food processor, grind up nuts/seeds, but not too much because you want them a little crunchy.  Combine with dates and work together until all nuts/seeds are stuck to it.  Now you can roll them into 6 balls or make them into bars.  I used plastic wrap to work it into an even piece about a foot long, cut it in 6 pieces, plated it and used the plastic wrap as a cover!
